I remember the knife from last year, it wasn't bill dance, but I can't remember who it was.
As far as fish knives, have you heard of then sunfish pattern ( called an elephant toe in other countries ) they usually have fish shields.
There's also what used to be called the fish n fin, it's a large toothpick with a scale/hook remover on it and they often have fish shields.
There's also a buck 110 with the Christian icthus shield on it.
And there are also keychain knives from the novelty knife company that are shaped like bass.
My sunfish is a large Rough Rider RR887, with the acorn shield.
I think you may be right, some of the Frost Ochee River sunfish may have a fish shield, now that you mention it.

Not that I want the competition for one but...
Being in Alaska, I've done a fair amount of fish engraving.
Rather than limit yourself to factory fish themed knives, you could pick out a Ti handled knife you like and have a custom shop like me or others here do a simple engraving of your favorite fish image and or text. Here is a quick rendering of a fish themed handle......

That is a pretty knife, I like what they did with the long grass/reeds. Never owned a CRK either. but I dunno, I can look for one, but I bet it's expensive.
