From the 5 seconds they show them in the preview I would have to say Global. Japanese made stuff, and also not available at the time that American Psycho takes place (doesn't it take place a few years ago?). Of course, only a knife nut would know that.

I saw those in the preview...I think I saw that brand in either an older Boker catalog, or a Blue Ridge dealer catalog...could have been a different distributor though. They do look cool though...I think retail on a set like that was around $200? I'm sure Mr. James M. could tell us more though.
