WITH one hand open?

Like the Fallkniven U-2 or a SAK but a higher quality steel than the SAK?

How about the Spyderco Centofante III or IV?

They have thin blades. Thinner than a Calypso Jr. even.
 
I was thinking more of a flat grind like the FK and SAKs have.

Slicer.

Of course the FK has a slight convex.
 
The Benchmade 530 has a blade that is dagger-ground from 2.5mm stock and is actually just a hair over 2mm thick at the thickest point of the actual blade.

Steel is 154CM.

How thick are the Centofante blades? The 530 is the thinnest one-hand knife I own.
 
Have you looked at the AG Russell Featherlite? 3-1/8" blade. Thinner design than any Spyderco I have. Don't know how thick the blade is, but it's obviously not as thin as a SAK blade. It's not a flat-grind either. But you should check it out if you get a chance.

Probably not what you're looking for, but the Benchmade Infidel has a very thin blade and is definately one-handed.
 
The Benchmade Dejavoo or Mini-Dejavoo punch that ticket for me. I like long thin blades and these are the best of the lot in my opinion - great slicers. Now, if you can find an original Spyderco Calypso that would be even better, but good luck on that as they're not many around any more.
 
The Centofante's are 2mm stock, very thin. I am using a passaround Centofante reground by Tom Krein to a .010" edge, and it has very high cutting ability from the thin stock and edge. I'm not sure what the stock edge thickness is on a Centofante, though.

Al Mar Ultralight series. I have a Falcon and can't believe how well their AUS8 holds it's edge. Just a tick or two behind the VG10 in my Spydies if I were to venture a guess. Check 'em out they have very thin blades and cut like a mother.
 
Are you more concerned with spine thickness or the edge? I like the Calypso Jr. for its thin edge, and some people are having Krein grind the ZDP version even thinner.

I have a ZDP Caly Jr. reground by Krein to a .005" edge. Now that knife has some cutting ability.
