Who makes the thinnest blade THREE INCH or more folder?

Ah HA! That must be IT. The Al Mar Falcon. I was looking at the Eagle and the picture looked saber ground rather than flat. May have been the photo.
But that Falcon looks interesting.

I just picked up a Spydie Stretch in zdp189. It's pretty dang thin. The whole knife is very thin.
 
Yeah, I'm pretty sure the Any-Knife-Krein-Ground model is the best knife you can get for those specifications.

Like the Fallkniven U-2 or a SAK but a higher quality steel than the SAK?

Get yourself a Victorinox OH Trekker.

Theres nothing wrong with the Steel in SAK's. It keeps a good edge and is easy to resharpen.
Most of the people who diss the steel probably don't own a SAK.
And if you want a thin bladed knife then its good to also have a canopener or bottle opener.
That way you can use them for non cutting activities so you won't be tempted to ever use your thin blade as a prybar or a screwdriver.

they aren't one hand open, but they have the meanest slicing blades i have yet to experience.

and, they are cheap enough to buy a couple and mod them to make them one hand opening, perhaps by drilling out the handle on the thumb side so that you can just friction the blade with the tip of your thumb like you would with a thumbstud. and with a little practice, the locking ring is really easy to use single handed.

A knife that you try to open with your thumb one handed without a stud or hole is very likely to bite you without warning. I speak from experience.

That said, I was just eating a piece of sausage with my Opinel, which glided through the meat like it wasn't there.

How about a Spyderco Catcherman folding fillet knife?
They are nice, kinda long in the handle though.
Unfortunately they are no longer in production.
One of the three or four Spyderco models i really loved
(all of which are now discontinued).
Whenever i take a shine to a Spyderco design they decide to discontinue them.

For the sake of the Spyderco users/collectors (and to avoid my own personal frustration) i've decided to not to even look at Spyderco's anymore!
