What do you guys use for steel, and what is your HT process? How thick for different sized knives, like for say a Spyderco dragonfly compared to a buck 110?

I make a lot of leaf springs. 90% of the time I use 1095. Occasionally, I use O-1, or a piece of fishtape (which is probably 1095,) or 440 C.
Heat treat is very unscientific-heat to cherry red, quench in canola oil, polish, temper to just past blue. The HT experts here will tell you that 1095 needs special heat treat to work properly. No so- I make switchblade leaf springs. Out of more than a thousand, I have never had one break.

Interesting. So what would you consider an actual temp for red and just past blue?

Damned if I know. I just do colors.
There are charts that will give you approximate temperature ranges for each color.
