Carbon or stainless. Already heat treated. I'm open to suggestions. If stainless what is a good starting out alloy? I'll be grinding and/or belt sanding. I want to go slow and not mess up the heat treat. I'd listen if you tell me "That is stupid, learn to heat treat" but this seems the easiest way to start.

You can purchase the steel you want untreated, do your knife and then send it to a heat treat service, just do your research about the steels they work with and thats it.

Most if the heat treated blanks you will buy already have the bevels ground and finished so you don't have to grind the blade at all, you essentially just put a handle on it. Also I believe most if the retailers selling blanks probably get them from the same place, since they virtually all carry the same patterns.

Are there some dealers you like?

Jantz has ground and hardened blades made for them, in the USA, in steel options beyond just 440c. They're pretty much ready for (optional) hand sanding and a handle. I haven't used them myself, but I've heard good things from people who have.
