Victorinox Yeoman with StayGlo scales and a pen and pin slot, and the tweezers should be filed to a V point to make them more useful. OH and I forgot: I need the miniscrewdriver too so my knive will be ultra-awesome.
 
It would be nice to see a knife with a blade offered at a couple of different angles. I'm not talking about anything as extreme as the new surefire model, (Surefire Bravo) but I think that I tend to prefer models that are swept forward just a little, for example, I really the timberline pistol model, and this doesn't seem like it would be too hard to do.
 
A large (Endura size) Spyderco hawkbill Salt. It just seems so right.

Pretty much any hollow or chisel ground knife with a flat or high saber grind. My to buy list would be many many times longer. Most cutlery grade steels are fine by my, but I'd definitely like to see more carbon steels used. Yeah and lose the partial serrated blades.

A plier-type multitool with just the pliers, a saw, can opener and maybe a couple of screw drivers (a bit holder?). Wouldn't protest to one knife blade and a file, which could be half-round (not a diamond coated one though).

Check with some custom makers. They will make anything you want.
 
I wish every single model by spyderco and benchmade came with the option of polished micarta handles - nice and heavy and smooth to the touch.

How about a polished micarta griptillian with a D2 blade? That would be fantastic.
