I may sometimes polish an edge using a completely worn belt, but I'm mostly a paper wheel guy nowadays.
I've yet to use paper wheels, but I've seen the results and I'm very interested.
If you like a worn belt for polishing edges that are already keen, try turning one inside out and dressing it lightly with your favorite buffing compound. A gentle touch and edge-down approach is necessary.
Now on the other hand, with the proper stones and speed, I'm sure a bench grinder can be used to sharpen safely, especially wet. But the coarse stones that most come with from the hardware store have virtually no place in a knife or sharpening shop.
