Why do we strip our beckers?

I can't really attest to any of the other beckers besides the tweeners but I really can't see how any of that coating could possible flake off into your food when using it for food prep. The force and prefriction batoning and hacking is the only thing the has managed to scratch my coating. I don't think cutting up a chicken or slicing tomatoes will really cause the coating to chip off.
I agree, but if you use your knife for both it may flake off because of the batoning while you're prepping food
 
I am probably going to strip mine at some point.

Should I be concerned about rust between the handles?
 
As long as you take care of the knife, rust on the handle shouldn't be a concern. Clean and wipe it down after use and take the handles apart every once and while to inspect and clean as necessary. The oils from your hand can cause surface rust, but can be avoided with proper care.

That being said, I just strip the blade and leave the handles coated. :p
 
leaving the handles coated sounded like a good idea... to bad I thought of it after spraying down the whole thing with the stripper.... lessons learned
 
^ yea i know the feeling. i taped mine off with painters tape and only did the blade, somehow the acetone soaked into the epoxy and the handle coating started just falling off.
 
I stripped my 2 because me personally I'm not a fan of black on black for fixed blades and I just like the look of steel.
