It's a design thing, overall package, width of blade, 3/8" pivot in a blade width of 3/4" would not leave much "meat" around the hole. Bigger wider blade would probably be fine. Come to think of it I may have seen a knife like I described above.
actually bigger is probably better for a number of mechanical reasons...but when you start getting above 1/4" you run into the problem stated above....theres really not a lot of room there. i think a bigger hole would provide more surface area and therefore a better stronger action.
one of the factors that dictate the size of the pivot is the surface area that blade sides and liner have in common. If it is too small (large pivot on smaller knife) this surface area can't give the side strength required to make a strong knife. The thrust washers (locking liner type knives) need to be large enough to provide this surface.
