I have an older Steigerwalt multi-blade knife.
The nail nick on the main blade is nearly obscured by one of the other blades.
Opening that thing is a two-handed deliberate act. I don't believe I've ever gotten it open in under four or five seconds. Never timed it, though. I reckon I could probably open the skinning blade faster.
It, too, is "worth the wait."
I have an Opinel #6 (or #7) and an Opinel #8. They will also never win any speed contests. Also have #10 and #12. Unsurprisingly, neither of them is a "sprint" opener, either.
Coming in a bit behind the Opinels and the Steigerwalt are the EKA Swede 92 and the Nordic T8. Both of them are two-handed openers -- don't even try a one-handed finesse -- with the Swede 92 opening a little faster than the Nordic T8.
Oh, and one of my Sod Buster Jr knives takes a firm two-hand grip to open as well. No speed to be had there.
