Will SOG ever make knives out of 3v steel ?

Just think the 3v steel wouldn’t have chipped so easily , kinda sad to have a 200$ knife not take a little punishment and fall apart like it’s made of glass
Your experience with one SOG Pillar in S35VN is an insufficient sample size to reach a general conclusion about the steel itself.
Your knife may have been defective, perhaps a bad HT. Perhaps an overheated edge on sharpening.
A photo of your chipped Pillar would be helpful.
Any conclusion is also obscured because any knife of any steel can chip if the knife is used in a manner that was not intended.
As others have suggested, if you're into throwing knives, get a throwing knife.
I am also certain that the only knife that can fall apart like it was made of glass would be a knife made of glass.
I've had SOG fixed blades since the 80s in SK5, Aus8, Aus6, MS VG10 and never had one chip. But then, I've never thrown any of them.
This is all independent of the view that perhaps SOG should have chosen 3V for a fixed blade like the Pillar.

"Yes" and "No" are both conjecture or a guess, with a 50% chance of being correct. (presuming the person answering is not employed by SOG, working in Product Design and Development, Assembly, or Sales.)
"Maybe?" is the only !00% correct answer by anyone outside the company.

I don't know if SOG will ever bring out a product with 3V blade(s). Part of the answer lies with their target demographic and the price point people are willing to spend for something with their name on it.

Does their target consumer care what the blade steel is? Most knife users do not have a clue what their knife's blade steel is, and believe it or not; they don't care!

Truthfully, I have no idea who SOG's target buyer is; "knife knuts"? Average Joe's, Ralph's, Earl Lee's, Bertha Bobbie and Ida Mae's? Teenage Special Forces/Ninja Wannabes? Something else?
(I don't pay much attention to their products, other than their multi tools.)

Would or do their aveage customer know the differences between the various blade steels ~ the advantages and disadvantages of each blade steel?
Remember, every blade steel is a compromise of different properties.
MOST cutlery consumers DO NOT know or care what the blade steel is, so long as it is sharp out of the box, and cuts a while before it needs sharpened. Also remember most people DO NOT know how to sharpen a blade. A lot of people toss their dull knife into the trash and buy a replacement, rather than try to sharpen it or have a pro sharpen it! A few might try a draw-through sharpener, and "think" the knife is sharp after using it. 😳

Would SOG's average customer be willing to pay a premuim for 3V -- or any other "modern" steel?

This tip broke just from poking a hole in a termite ate up piece of wood. It was not abused. I'm not impressed with SOG pentagon. I mean DOG!;)
