6 5/8" AEB-L Gyuto cryogenically treated (62rc) with some beautiful Amboyna Burl, creamsicle orange G10 liners and brass Loveless bolts. Choil and spine are polished for comfort. Edges are set at 18 degrees and polished on a 4k water stone. OAL is a hair over 11.5", perfect size for any kitchen!
