For your consideration:
8.5" AEB-L Gyuto, cryogenically treated (62rc) with some increasingly rare and beautiful "Detroit Agate" aka "Fordite", grey G10 liners and brass Loveless bolts.
This gyuto is .07 at the thickest portion of the blade and is convex ground. OAL is 13.25" and weight is 8 oz. The edge is set at 13 degrees and polished on a 4k waterstone.
