So what does the saying on the blade mean? I tried translating it and what I get is the key of the fields. Could that mean like the key to the good life, or Laguiole, the key of the country? Excuse my lack of French, and we know online translators are only so effective.

Maybe not my prettiest wood covered knife... this one is Exoctic Mexican Bocote on a 55 that has darkened over the years.

the expression to take the key to the fields means: to take one's freedom, to free oneself.
This expression dates from the 14th century.

It would seem that the equivalent in your country is: "to take off for the wild blue yonder".
Pierre-Yves Joyeux, the cutler who made this knife was employed in a cutlery factory, when he became independent he chose this expression as his "brand".
