On this Laguiole is mounted a san maï blade forged by Davide Steri, the handle is made of burr ash.
In an aesthetic style close to your knife, I have a dorgalese by Davide Steri in amboyna root and san maï blade.

IIRC, Yew was often used to make English longbows.Handles from a Yew Tree. I’d never heard of them but a quick google search solved it.
