burrs plural, lose it, find it, knock it off, partly or along entire edge, flip n repeat, yes.
Coarse stone will raise bigger burr, and you could get rid of it when grinding other side, but of course your creating another burr on the opposite side.

try this, set camera up n video your grinding strokes for both sides, maybe your wobbly perception is on to something?

Good advice so far OP.
Better to think of each burr individually, seeing and feeling 3 areas individually- hilt center and tip. Cell phone pics, a kids magnifying glass, jewelers loop, etc, would let you zoom in for seeing burr. I learned from Boys Life or Field and Stream articles when a pup, only remember being "told" to keep stroke steady and the same every time.
I was absolutely wobbly and it resulted in an almost spideredge effect. I’m past that and don’t want to go back!

Unfortunately I can’t focus entirely on sharpening. I’m trying to chart my patients right now (hospice chaplain) and sharpening between refreshes. Next taking my 3 year old to gymnastics. Then eating supper with family, then wrestling with a 3 year old to brush teeth and get ready for bed, all the whole hoping my 9 month old doesn’t eat something she shouldn’t. And loving on wife. Sharpening understandably gets short shrift.

Another thing you can try is going One direction at a diagonal for a while and then go diagonal to that in another direction so you can see the new scratch marks showing up. In other words go at an angle to the edge until you have a good pattern of scratches built up and then go at an angle to that it will help you to be able to see where the stone is really touching the edge
 
This is way different from my days as a teenager sharpening my old Uncle Henry with a whetrock.

Thanks for y’all’s help. I finally got a decent edge. Brought it down to 16° to reprofile, man did that take a long time. It seems that s30v prefers a toothier edge. What are y’all’s thoughts on a micro bevel and at what angle?
 
For some reason I decided to reprofile my PM 2 to 15° per side. Oh lord, the 320 diamond stone is working hard.
