hold it underhand, with the bite handle in your direction. Now what you basically do is let go of the safe handle, and then when the bottom of it is facing towards you, release the bite handle. Then you make the catch when the safe handle comes back around
What Darth said, but ... Just letting go of the handle won't roll the knife over. It needs just the slightest bit of torquing to bring it around. Choke the pivot, and give that safe handle a wee push out to send it on it's way.
Here is a small clip of a routine with a Y2K in it. I would have just done that move alone but I stashed the tripod away and didnt feel like breaking it out again. Anyway, in the scene I do a couple of forward grip manipulations and then at almost exactly the three second mark I start a Y2K. The only difference is that after the thumb roll has been completed, I go into a finger roll instead of just whipping up the safe handle to have the knife in an open position.
