Yes another first santoku question...

I've had Victorinox santoku for a very long time now and I was never that impressed with the edge until I started putting edge with my new diamond stone to it. Holds a very nice toothy edge for a surprisingly long time and sharpening takes like a minute.

That is good news. What grit of diamond do you use to get the toothy edge?

I use atoma 1200. It’s quite abrasive despite being 1200. Great ”stone” for slight reprofiling too.

I have been using a double sided big plate, 1000/300. Maybe time for a finer one.
