"You call yourself a knife nut !!" HELP

I use Henckels knives mostly but I also really like the Dan Koster's chisle ground Mater for chopping tasks. He makes them in left and right handed versions. I would have never thought of using this kind of knife but after testing them, I'm a big fan. I personally use the right handed version (the grind is on the right side of the knife).
 
J. A. Henckels user here.......... bought them 10 years ago when I got myself married. The wife only uses 1 knife out of the block. Would be easy to tell if you could see.....rofl . The 2 1/2 inch parer has a bent and broken tip , all the rest are sick sharp and perfect. Was pondering about upgrading to Shun's or Wursthof ,,,,,,,, BUT ,,,,,,, I found this place and only have money for INFI ,,,,,,, hopefully the Henckels will last a lil while longer.

I would suggest to anyone, Global knives, very ergonomic, thin blade slicers, convex edges, hold a good edge and are not that expensive. My wife thought they had a funny shape handle until she used them, we have probably have 10 - 12. She makes very clean cuts on her fingers now, at least they heal faster! :eek:

Global chef knife. The only knife you need in the kitchen besides a good paring knife and a serrated bread knife.

I have also been meaning to try out a Kershaw Shun chef knife but have not been able to bring myself to spend the money. LOL. Which is pretty ironic given the bucks I have dropped on my rapidly growing Busse collection.

Got one for the spousal unit last Christmas. It's a huge hit around the house ... absolutely HER favorite knife.

However, unbeknownst to her, there's a nice NICK XXXL being refurbished by Garth even now. Hoping it makes its way back here sometime around Christmas.
 
Go for the 1/2 Santoku, 1/2 Chef. You get the best of both time proven designs! ;)

I posted a thread very similar to this about 4 months ago or so, and I ended up with the Wusthof Classics. We are VERY happy with them. We DID try the Shunions (as I like to call them) and while they are gorgeous knives, the wife wasn't really sold on the feel in her hands, so we returned them. We also tried the Globals and while they look nice, boss lady wasn't too keen on the smooth metal handles. She wanted something more substantial. She liked the Wusthof Ikon's a lot, but just loved the classics. Good thing, too...with the Bed Bath and Beyond 20% coupons that come in the mail we saved about 200$ on our full set, and got them delivered free as well. :D:thumbup:

It is laser sharp. My mother-in-law commented that she never saw lettuce (romaine) cut in the air before. I didn't realize that I had gotten into the habit of just holding the bunch and slicing it straight into the spin washer. No effort...
 
If you possibly can, try the knife in hand before buying.

I accept that Global makes great knives. But I won't use them. They just don't feel good in my hand. They don't suit my style of slicing and chopping.

If a knife does not fit your hand and use, it doesn't matter how techically good it is.

Brendan---That is the Wilkin's Ryback FB Restaurant Model. I have cooked professionally for 16 years and this is my favorite knife. You will love it. I got mine from Moore Cutlery. The Becut steel is unbelievable. Check it out.

of the globals which would be the best to start with. Would like to get a few over the next few months but which to start with. Global fit my budget and if they are comfy I'll get one !!
