You know your knife is sharp when...

If you cut yourself with a really sharp knife, you seldom even feel it cut. You only see blood. The pain comes later. I don't get too excited about it unless their is a lot of blood and it won't stop bleeding.

Very true, been there! My cutting test is phone book paper, too much more and it won't hold an edge as long as I need
 
You know your knife is sharp when it can slice through the space-time continuum.

As a chef I stopped cutting myself because I need to work with my hands constantly.

But I know my knives are sharp because I cannot put any amount of pressure on my edges.

if you can touch your edge, its not that sharp.
 
With an emerson.....TRY THAT!

I have no issues getting my BM's TP sharp :) I don't have any Emerson's but after checkin out their knives - not bad!

I generally judge sharpness by shaving arm hair or the TP test.. No butter knives in my stash
 
I was at Academy once and was interested in checking out one of the Kershaws hung up in a clamshell package. It was at the tallest end of the shelving, and after asking for help from 3 different employees in the section (who, by the way, did nothing to help me), I got frustrated and took matters into my own hands.

I pulled out my Cryo, put my feet on the bottom of the shelving, reached up high and proceeded to slice through the thin piece of plastic it used to hang on display. A second later I felt a small jolt run through my index finger. Then the blood started dripping off my hand onto the floor. I had a clean, straight slash about half an inch long on my finger, and man did that sucker bleed! I ran to the bathroom, washed my hands, and wrapped about 4 napkins around my finger.

I haven't felt that stupid in a while. I got out of there as quickly as I could. Needless to say, I didn't buy the knife :rolleyes:
