Welcome to the forums, guncollector. As you are beginning to see, in the knife world, at least amongst us knife knut types, carrying one knife is pretty close kin to wearing only one sock. There are myriad reasons for this, but some are that knives aren't perceived as having the finishing ability of a .45. Given the close proximity in which knife combat can occur, Murphy's law is expected to be working overtime. So, compensation is made ahead of time.
Now, before I go further, you need to understand that many of the knife knuts on these forums are carrying one or even 2 handguns. A great many of us also carry canes, at least as much for self defense as because of need. Of course, many of us do need the cane for ambulation. For those, the first rule in any potential knife fight -- to RUN -- may not be an option, or would be totally futile against most aggressors.
I always carry my large regular Sebenza in a belt sheath. I sort of can't bear to part with it. But, it isn't really counted into my "rotation." About 5 days out of 7, my right (strong) side pocket is occupied by my Spyderco Wegner. The other 2 days are used by my CRKT large Apache. All of those days -- at least at present -- are matched by my Spyderco Native FRN in my left pocket. Also down there in that left pocket is a CRKT Peck, acting as a money clip, but presumably available for something else should things get extremely bad. I also wear a neck knife all the time. Usually lately, it is my Camillus ArcLite. Sometimes I carry my REKAT Fang instead. For over 18 months, I carried a CRKT Stiff KISS. Am getting a CRKT Carson F4 ASAP. That could take over as #1, because am getting a Normark Concealex sheath for it.
When I wear my fanny pack, my Camillus EDC is riding in there. Sometimes, just for the heck of it, I stick my Outdoor Edge Paragee in my right rear pocket. Has a super strong clip, so I know I won't lose it.
You gotta get going and get some knives, man, so you too can have a rotation!
