My favorite Far Side cartoon is one where two cows are sitting on a sofa and the phone is ringing. The caption says, "And here we are with no opposable thumbs."
Most of my tip-up knives have dual studs and I actually flip them open with my index finger just after the draw, so provided I can HANG ONTO them with no thumb I can open most of my knives that way.
