Hi Jake, and welcome aboard! I've had both and much prefer the ZT0200. But I am a little biased as I do not like the titanium/G-10 construction method, even though Kershaw does put a steel liner behind the G-10. This is why I have hardly looked at the Hinderer, Strider, ZT0550/0560, and other's of this ilk. Please don't misunderstand me as I am not saying that this is an inferior method of construction, it is simply a personal thing with me.
But back to the thread. The fit and finish of the ZT0200 is spot on! It has the feel of a custom in your hand, especially with those sculpted G-10 handle scales. I've had about a 1/2 dozen of these since they became available ( sold and traded a few) and now have 2 of them. The lockup has been excellent on all of them. Those hardened steel liners are .080" thick and lock up solid against the .157" thick blade tang. The hardened steel is actually harder than titanium and you will not get as much lock wear. Of course as thick as the lockbar is on the ZT0300 series, I don't think you are going to have to worry about any wear on it either.
Far as blade steel goes, it is 154CM for the 200, and S30V for the 300. While 154CM is an older steel there are many folks on the forums that like and appreciate it's ability to take a fine edge, hold it for a very reasonable time, and then sharpen up really easy (with the right equipment).
I've always thought that the ZT0200 was one of those knives that is really a super value for what you get vs. what you pay. There are other knives out there constructed from the same materials for higher prices than the ZT.
Bottom line is that I do not think you will go wrong with either one of these knives! Pick one and enjoy it.
