ZT 0561 dull right out of the box?

I have a 561 reprofiled to 30° and a 560 reprofiled to 25° and hands down the 25° is by far more wicked
 
I have a couple of small scratches on my stonewashed Leek S30V from sharpening without taping the blade. Is there a way to get the scratches out without refinishing the blade?
