Greetings everyone! I just rolled this one off of the sharpening stones this morning, and I am really really going to miss this knife once it's gone. It is a sujihiki if we want to get fancy and technical, but a slicing knife for sure! I had a hard time sourcing the steel I wanted for this project, but was able to get some in, and I am glad I did. 14c28n is an excellent cutlery stainless steel. It has nitrogen, which is quite uncommon, but becoming more prevalant in today's steels. This allows for more corrosion resistance and wear resistance. Think of it as AEB-L on steroids. You get the same level of toughness, but with better edge holding and more stainless properties. I was extremely pleased with the heat treatment, as my hardness numbers were a little higher than the charts suggest. After a "cryo" cycle post quench and triple tempers, the hardness is 63.5HRC. I also included "cryo" quenches betweeen all tempers. The steel just feels, dense, for lack of any real objectivity.
The hand rubbed satin blade has a full flat grind, ever so slightly convex, and the edge is very thin. 0.010" is measured about 1/16" above the edge. The spine and choil have been mirror polished for a very elegant look. The handle is ghost/jade G10 with white liners that really brighten up the green color. Stainless pins. Balance point is perfect, right at my maker's mark. I stopped honing on the Spyderco fine ceramic, and then stropped lightly on 1 micron diamond leather. The edge, even though a bit refined, has a LOT of bite to it. All grinding was done under flood of water, and sharpening is done by hand on stones. It is quite the aggressive slicing machine I had envisioned in my head before starting the project. If you are looking for a very high quality slicing knife to add to your block or the magnet, this will have you covered!
