Gixxer was kicking around an 805 style working mans blade in S30V in another thread, so I thought I would open a new thread about it.

I have talked about this very thing in a few scattered post since last hunting season and maybe if it keeps getting beat on some, it might happen some day.

The 805 is a S30V Signature Series Limited Edition with 1,000 made, with Chuck and CJ Buck etched signatures, if some don't know.

So, it is not what I will call a user knife. Like Tim, I am wanting a user in one of the premium steels, preferably a Buck brand with the Bos treated steel.

My want, specifically, is for the final quartering (deboning) of a deer in the field. Even more specific, removing the backstrap and loin as well as the rest

The 805 is overall 9 inches. From top of the handle to tip of the blade is 4 3/4 inches. (Give me a 1/16 or so on these measurements). Actual cutting edge is 4 1/4 inches.

So the 805 comes real close to what I want more so then say a 118 which is about a quarter inch or so shorter in all the deminsions of the 805. And yes, a 105 has basically the same deminsions as the 805, but using the 805 as my example since it already has the S30V.

Now, I will toss out what might well be my "perfect" deboning knife.

The 121. I very recently got one, along with a bunch of other 100 series that I can compare sizes to.

And the 121 has become my new most favorite "wish" knife. I think if it was in S30V or BG42 and a checkered rubber handle like on the 192, I would be very happy

The 121 is 9 1/2 inches over all, 5 1/2 inches tang to tip, with a 5 inch cutting edge.

So when Gixxer was talking about building one similar to the 805, Maybe he will build me a 121 at the same time :D :D

I guess it's a deer hunter thang.....:o and, yes...straighten out the spine of this 121 eliminating the fish scalers.
 
Really like the blade sweep on those and that fish scaler gig is cool...

Fish scaler is cool, but whitetail dont have no scales...

that 805 what is that ? when i first read this i thought it was the one with the walnut handles but they are a 802 and a 803 , so whats the 805 ?
and is the other in the pic a klink ??

goose we are going to wear you down eventually so you better clean a spot beside your 110's for the big guys :D

805 LE Walnut, as is an 819LE Seralized...

are you sure thats a 805 ?
i have a buck 2005 mini catalogue and they call it a 802 signature series and the other is a 803 signature series

No, These are the only two I have in that series. Here is a tidbit from the COA. Says same on the 819.

I do have two of the 805 and when the trade thing gets up, plan on trying to trade for one I don't have.

Very nice knives ratman; I like the klink with the rosewood much better than the Iornwood. I've never liked the looks of the sig series.....don't like the checkered walnut handles. They should have put stag on them :).

After the field care and skinning is done; I use a thin blade fish fillet knife for boning my meat. The thin sharp blade is sooooo easy to clean the meat from the bone. The thin blade is super easy to put a fresh edge on as you work :). I'm a lazy kine guy when it comes to hard work....LOL.

What can you tell me about that 121? I've never seen one with a handle other than black, and why did you call it a klink?

yeah,, I hear ya on the lazy... lol.... what got me started on this is toward the end of the season past, when it came time to go for meat instead of racks, Dad and I took 5 or 6 in just a few days. (yeah we have plenty of deer that we can pick and choose). It was then that I could see a need for the longer thinner blade to make it go faster. So I have already dug out the old fillet knives from my fishing days, and they will easily take a shaving edge. But they won't hold it for the amount of processing I anticipate again this year.

But I have also added the lansky crock sticks as part of the truck gear and will give the fillet knives a shot at it this year with the crocks close by on the cleaning table.

I honestly am not up to speed as yet on the model 121 as this is the first one I have had my hands on, as I haven't found a regular one yet on the bay that I have considered cheep enough to bid on.

Harold Klinkenhammer is a custom knife maker that takes Bucks and designs them to his specifications. Maybe Scott Hartman or some others will kick in her with better info. This one is sambar and cherry wood.. End of the box says Klink Special. So everyone just says Klink.

I see I was a little slow...in posting... Thanks buckman! I forgot about that series 1 and 2 part... the 121 above is series 1

just to explain better the sets had the following nine knives in them and the first series had 101 complete sets made (i think) and they are stag and cherrywood handles
the second series had 63 complete sets made (i think) and they are stag and ironwood hadles and they are made with some of the special features that that model knife had had in the past
the 105 has partial serrations , the 121 has the fish scaler , the 124 has the lanyard hole
theres probably something i left out but someone will fill it in

I have an an older 121 in stag w/ tan sheath no top scaler notches,I bought around 1984(?)NIB...no pics....maybe later if you want them.
I have the 119 S30V and will use it this hunting season....I like it without the
blood grove's

I picked up the 2nd 805 thinking I would use it... Just cant see doing that tho, to a collectable....Grrr... thus the original topic of this thread... I also like the blade on this 819. Or are you saying that you have a true 119 in S30V??

Those are all in the series 1 as well and the set that Scott posted also has an extra proto type 102 with a fatter pommel and missing the bottom two spacers. So at least that set has 10 in it... same serial number all 10

Close .... 64 sets of the second series....and several singles with no serial number and some broken sets with serial numbers up to 93....and maybe as high as 100.
