Hi all,
I'm offering this 230mm (9") gyuto up for sale today. The handle is hybrid Buckeye Burl with black paper micarta ferrule and grey and white G10 spacers. The grind is hybrid full flat and convex. There is full distal taper and the edge is down to 0.008" before sharpening. The balance point is just in front of the ferrule. The blade is hand sanded to 600 grit.
SPECS:
OAL: 400mm (15.75")
BLADE: 230mm (9") long, 50mm heel height (2"), hybrid grind (full flat then convex down to near 0.008"), hand sanded to 600 grit.
STEEL: 2.5mm (0.09") CTS-XHP heat treated including cryo to RC62.
HANDLE: Stabilized hybrid Buckeye Burl, black paper micarta ferrule and grey and white G10 spacers
