Cooper looks cool when it is nice and shiny. Personally there is little appeal from a "patina" point of view for me. So, most anything cooper (knife, flashlight, etc.) for me would probably be a collector versus user.

Variety is the spice of life is the best reason I can think of.
 
I like copper and would buy it on a knife. I have several copper wallet chains in biker weight, one or two with rather heavy links. I have a heavy copper chain loop on my HEST 2.0. folder as a lanyard. Copper chain can look good on a heavy knife.

I think it boils down to what people want or are used to. The real, natural things...copper, wood, bone, leather, wool, down, washers, mahogany woodwork. storm windows. Or, the created, synthetic things...plastic chrome, Dymondwood**, micarta, kydex, PolarTech, DuPont 550, bearings, Home Depot cabinets, Loews white vinyl windows.

Same ol' same ol'....

A couple of people have mentioned an odor, re: copper and sweat. Only some people experience the "odor". It's a combination of the copper, the person's sweat composition and their olfactory gland functioning. To those who can smell it, they absolutely hate the smell. My mother and one of my sisters are two such people. The rest of us don't notice a thing. Everyone experiences metal/skin reactions differently. My mother's skin eats silver and I am allergic to one of the metal used to debase gold into 10K or 14K.

But no, seriously... I really like the look of copper when it's all worn in and old looking.

Are you the type of person that keeps your shoes looking nice and clean? Or do you like them nice and worn in and kinda dirty? If you're the later, you'd probably enjoy copper a whole lot...

Damn, what did you do leave it outside? Haha. Looks cool man. I like the look of copper on knives and flashlights, but doesn't it make your hands smell?
 
Effin photobucket won't let me upload my pic of two copper Zippo's. Copper is ever changing. Looks real pretty cleaned up, but ages beautifully. Important to the body. Cheap & alloy able. Has the scent of a woman, if you catch my flow:p a mainstay in conducting. Workable & rework able. And proves your not a prissy pants who only likes Ti & the like.

Copper and its alloys are the only common metals that aren't silvery, gray, or blackish. If you like yellow, orange, or red, then copper based alloys are the go-to choice. Gold is too pricy for most of us.

Does anyone have insight into why copper components are becoming more popular on custom knives or as replacement parts on modified production knives?

From a materials standpoint, especially for structural parts like scales and standoffs, I don't get it. Low strength and is more easily scratched or dented compared to other materials. Quickly forming, messy looking patina. Gives off an odour and reacts with skin oils and sweat.

Its like asking why carrying 8oz folders is popular or why people make a $300 machete
People will buy them

Copper look cool new and unique used. Many of these customs probably won't see much carry time anyways. As long as you're not overly brutal on it, copper will hold up
