Great! Lovely to see your perspective on the different brands, grinds and pricing! I am from Spain and I own two moras and three Falknivents (F1, S1 and U2).
My feeling is that they are hard to sharpen because you need to remove material from the whole ground area to achieve the perfect appex without creating a micro bevel. If neglected for a long time, this could be a tedious and time consuming process. My experience with MORA is that the steel is soft enough that a coarse or Xcoarse DMT stone helps a lot.

There are way better knife people on this forum then me, especially on knife sharpening. But as stated before i rellay like the Martiini knifes for skinning and hunting tasks. I dont use EKA knives anymore, the blade is to soft and they dont last as long as Martiini. Mora has good "working" knifes for abusing. A handmade blade by a professional handle maker and professional smith is always nice and in my opinion the most "top notch"/top tier you can get with scandi grind. If you wanna go crazy and have the money they are some really nice knives with damaskus that cost over 1000$. Obviously its more art then knife at that point, but they are surely lovely to behold.
