I best admend that last statement. Most organic subs such as wood and flesh.

The edge area is tough to check. The sample has to be flat to check it or the brail will break. Make a small slab of steel about the thickness of your edge and harden it. It can be checked . It will only give you edge hardness not the rest of the blade if you are diff tempering

Fisk, as for bone yeah, I didn't mean trying to go straight through it, but glancing strikes when slicing or doing a separation.

Darrell- thanks for the king words. Never had a problem with folks speaking their mind so long as it is not mean spirited. Opinions are there for giving. You are smart to question things that you do not understand and as for your M.S. test you are of course always better off knowing the judging parameters.
