AEB-L at 57-59 HRC

I switch off between a Harukaze Gyuto (high wear Aogami Super core at 63 Rc with stainless cladding) and a lower wear 440C custom chef's knife with excellent ergonomics.

In a couple months, I hope to get a super thin Vanax SC (0.065 stock and 0.007 edge) at 61 Rc with ergos like the 440C chef's knife.

My Vanax EDC (60 Rc and 0.015 inch edge) cuts so well that I wanted to try it on a kitchen knife. When I effortlessly sliced through some thick rope tying down a tractor using my EDC (no sawing), the mechanic just stared at the knife. "I want to see that knife," he said. I love Vanax.

Vanax would be very interesting to try in a kitchen knife. It has most qualities that should make it good in that role. I tried cronidur 30 at 60 HRC and it was very good, I would want it harder though. Vanax should be even better.

Definitely, would love to try it as hard as possible and not super thin in the blade, just thin behind the edge. I like where you are going with starting with 0.160" stock. Food release is a real thing for kitchen knives and super thin blades, as well as they cut, are not always the best for everything.
 
Hardness is capped, it's just the nature of it's chemistry. Works a lot better than ya would think. I had to try it to believe it.

B3 nailed it. The look and feel of tapered tangs with a moderately thick blade (.150-.185) and distal taper is aesthetically pleasing to me as well.

I like blade forward balance when using pinch grip, so handles that are not too heavy work best for my preference, especially with s-grinds since the blade is significantly lighter than convex, everything else being equal. Convex works really well too and is probably easier to make for a maker. D DevinT type convex is one of the best as an all around, that I've tried, in general his kitchen knives are some of the best around.

I wouldn't go that far;), a lot of good "New" makers out there, some very good.

Speaking of Vanax, would probably make a very expensive chef size knife, given how expensive the steel itself is.
 
So looks like I should look for something with a harder blade. Can anyone point me in the direction of a maker who is able to deliver a custom AEB-L knife in a reasonable amount of time? I have an AA Forge knife that I had made years ago and I like it a lot, but looks like it would be an ordeal to get one ordered given the backlog.

I'll keep my eye on the exchange but it's kind of hit or miss and I have some particular specs since this is a very purpose-specific knife.

What type of a knife are you looking for? Try talking to HSC3.knives on IG, he is a great guy to work with, ask him if he can make what you want and heat treat AEBL as hard as you want. He also works with other steels like Z-Wear.

Not a kitchen knife. That is a digression/hijacking of the thread that I'd ask be taken to a different thread.

My questions are around outdoors knives.
 
Hard to beat 52100 for a field knife. Just dry it off before re-sheathing, and/or wipe it down with a rust preventive -- Vaseline works great, nontoxic, plus you can use it for a fire starter (a cotton ball saturated with Vaseline is a great fire starter, plus you can grease your knife with it).

Thanks ace. Do you think it has the benefit of being easier/quicker to sharpen at the lower hardness?

I have one at 60-61 and it is a dream to sharpen. So easy to get hair popping sharp. Easier than 52100 even!! And I like 52100!

I think it may be even easier to get sharp than my 1095 knives, and that is saying something!!!!

The LT Wright GNS in 3/32 AEB-L (saber or convex) is pretty close. A Genesis with that steel in flat but with a GNS-style handle would also be good. I don't know if I'd like the broomstick style handle.
