I heat treated a few blades yesterday, quenched in aluminum plates. But how long do you usually hold in the plates? I held till cool, then pulled out of the foil, when the blades were cool to the touch I put them in the freezer for about 15 minutes, then into sub zero. Tempered at 400, twice.

You want to have as constant a curve as you can. So plates to room temperature then into the sub zero (in the plates, out of foil if possible, or at least clamp them). I don't do your freezer step, but it shouldn't hurt.
