Alright... I want a secondary EDC that's INSANELY-STUPIDLY SHARP!!!

Spyderco Calypso, Jr. ZDP-189. But, if you want another brand of knives with ZDP, try William Henry, although they are more than you want to spend.
 
Instead of another knife perhaps an edge pro sharpener, then reprofile and sharpen your edc till it meets your requirements. Buying a sharp knife is good. Being able to keep it sharp or make it sharper seems better. :)

Ya, the Calypso Jr was amazing even when it was in 8A, it was my fave Spyderco even back then.. On the other hand, the ZDP-189 is what let Spyderco modify the geometry to take the edge even thinner. 58 Rc 8A will indent and blunt a whole lot faster than 64 Rc ZDP-189.
 
Esav nailed it on the head... I meant like dagger-symmetrical. Looks-wise was what I was talking about. Nothing about the grind whatsoever. I'm just learning about the grinds, and I do appreciate the time you've (Joe) taken in explaining everything.

Thanks for the opinions... I'll probably wait for the S30V Leek. And then something with ZDP-189 when my bank account grows in the future.

Sharpest out of the box for me was the Spyderco Ronin VG-10. Nice tek-lok kydex for EDC. Sharp enough to please any Pinoy!

My thoughts exactly. With practice, almost any knife can be made shaving sharp.
 
I have a Bob Dozier Classic that I can shave with, but it will run you close to 400$ Another of my shaving sharp knives is a Kellam Puukko, basic carbon steel and good edge geometry.

As for folders I have the Calypso ZDP-189 which has been mentioned several times already. Will get the Spyderco ZDP-189 Delica when it comes out too. The other scary sharp folder I have is a 3.5" custom Dick Atkinson with a flat grind 440C blade. Imagine, proper heat treat, good edge geometry, and 440C can be pretty damn good.
