I prefer CF and G10.
I'm not a big fan of metal, particularly smooth metal. Ti or alum is ok with some texture.
Metal being too cold depends on temps!! It is totally NOT overblown at temps below 0F. Even an exposed tang or rivets can suck the heat out of my hand through thick mittens when it is really cold (northern plains sub-zero cold). Metal handled knives get put away for winter here! G10 and CF are my preferred handle materials in winter.
