some.unsolicited advice.from.this.professional chef: the bump on the top edge where the handle mets the blade should go away. we usually grip the blade itself with thumb and forefinger on the blade itself for better control and leverage.

the bump is in the way.

no charge! buy 2 unsolicited advices and get the third at cost!

Nice find, Amy!!! :thumbup: ...I guess this means that I won't be able to work a trade with you for one of your cheesecakes using my thin Nick as trade fodder after all, eh??? :(:( ;) :D LOL ...Can't wait to see the knife when finished!!! ... Great design, but pretty awkward with that carry-it-yourself cutting board. LOL

I'll keep my thin NICK. I don't like rocky-knives. They wander too much on me. :(
 
VERY cool for Amy, and cheesecake for you, but I don't understand the width thing. :confused: NICKs were wider than this, no? And that sheet of stock that VTW used was wider. :confused:

The NICKs were over 1/2" narrower because the handle didn't rise above the spine. . . The stock that VTW used was nearly .300" thick. . . I don't really want to grind that down to .125" :eek:

So, ATS-34 gets the nod on this one. . . No worries though. . . what we can do with ATS-34 would blow your mind!!!!. . . Amy-0 should be very pleased!!!

Nice looking design boss. I'd love to see a run of those made from INFI. It might be the perfect opportunity to spread the INFI addiction to my girlfriend who is midway through a chef apprenticeship.
 
I would buy 2 in a heart beat. Our kitchen knives SUCK and my wife is hesitant on pulling the trigger on a new set. I would stealth this baby out when it was my turn to prep!!
