I spent some time at Camp Lejeune in 1999, so here are some ideas.
Everyday, with the setting sun, you could drop a fishing line into the new river from a small dock behind the BOQ at Camp Johnson. This is a sweet little spot, and it is just below the flight path at MCAS New River.
Also, you can go to Topsail Beach or Onslow Beach with surf tackle and cast directly into the ocean or inter-coastal waterway.
Even if fishing is not your thing, it sure beats looking at the inside of a quarters room. Also, if you are getting quarters, Paradise Point cannot be beat.
For the weekends, paddling in the outer banks is the essential activity for the Carolina coast. Asheville is about a four hour drive, and the gateway to many awesome mountain adventures.
There are many state parks further inland which may be more enjoyable for bushcraft than the marsh / pine forest near the coast. The Croatan National Forest is nearby, and a web search should turn up some gems inside that preserve. I seem to recall a White Oak River landing with a giant tree canopy which was accessible from the nearby highway.
