It is unfair , just to confuse me ! Sorbite ,metallurgic or chemical as in the salt of sorbic acid , a food preservative .
Of course I still am confused by braise and braze !! :rolleyes:
 
Hey! I got 10/11 on a what I believe to be a technicality!

What steel phase are knife steels primarily made up of?

I just figured that normalized steel is primarily pearlite. We all start with unhardened steel. You should have specified "finished knives".

Come on, teach.... give me a half point at least.... I got Kinetics right for pete's sake!
 
10/11 kinetics threw me too. When I first came here I would have missed every one. I have learned so much from you guys, Thanks
 
There is also an issue of how carbon makes steel hard without the material being heated to a high temp and quenched. ;)
