10 out of 11 here. I fat-fingered the air hardened question and didn't notice it. Fun little exercise. I wasn't truthfully all that confident going in.

I'm sure it wouldn't be too difficult to eclipse my scope of knowledge in the subject though.

The most "advanced" steel I've ever owned or used is 440C, and I'm quite happy with 440A, 420HC, 4116 Krupp, 1055, 1065, 1095, whatever it is that Victorinox, Mora, and Opinel use. (The latter two in carbon steel, not stainless.)
