I am trying desperately to like it and hoping it will grow on me.

It just seems a little wiggley woggley to me (technical term).

Any pics of similar knifes with one blade out?
 
Im on it as of today...stitching it together...but its only a pile of inanimate limbs...I need a brain...the brain of a genius!! .....a squidbrain 'll probly do though.

In the days of rapid expansion and exploration maps were essential, and the need for surveyors was great. Surveyors were transported to the new lands by sea, and seamen and surveyors naturally became allies and necessary to each other's trades.

Everyone knows of the traditional work songs, the Sea Chanties. When not at work the sea-faring men would dance jigs to keep time. Jigged bone is an offshoot of this singing and dancing tradition. Scrimshaw done while dancing a jig often as not resembled a roden-gnawed bone. The shipboard surveyors would take this Jigged Bone, and apply it to the knives on which they relied so heavily. This marrying of traditions gave birth to the Jigged Bone Surveyor's Knife. This excellent rendition of the original article is a faithful recreation of the collaboration between the seamen and surveyors of yore.

I really like this pattern...and really hope I'm lucky enough to acquire one. Getting a GEC is now officially just as difficult as getting a steel Rolex. I'm on several "lists" with dealers...but never get a notification. In fact, I don't even get an email update regarding GEC stock anymore.

I should’ve been more specific. Trying to get a stainless steel Rolex sport model, like a Submariner or a GMT is near impossible. There’s never any available at a dealer and the typical wait time is 4-6 years. When one becomes available through your dealer, there is typically a dealer markup as well.

I waited 2.5 years for a stainless steel SeaDweller. Still waiting for a stainless GMT with red/blue bezel - 3 years and counting.

The gold models are just less popular with aficionados

Wow, just wow. And people complain that folks at GEC don't make enough pieces! But why Rolex make one copy per few years? Or you meant that they are always gone so instantly, that one should try for several years to score one? Seeing the prices on Rolex, I would personally be much more happier with all the GEC knives I could buy with that amount.

A few years back, there was a sports figure who posed wearing a submariner. They’ve been hard to get due to high demand ever since.

You should report that AD (assuming they are an authorized dealer and not grey market) for that. It’s strictly against Rolex rules. That won’t stop them from other unscrupulous ways around it (like selling to a very close customer and buying them back later, which is then ok for them to mark up) but new watches they are pretty strict about.
