That question is really too broad. You're talking about three countries that cover much of Western Europe. Can you be more specific?

if you go to Germany I suggest you get the boker switchblades. Now they are worth some thing. They make really good knifes over there too. I hope you enjoy your self.
 
In europe, where I live, there are many knives store, for example in germany <selected knives>, in france, <coutellerie tourangelle>
