Best Cold Weather Food ?

I have been cooking a great cold weather dish. Brown a whole chicken, then sweat veggies including onions, potatoes, carrots, celery, along with a sprig or two of some fresh herb (I use tarragon). Then add stock and plenty of cream, add back the chicken, and braise until done. It is incredibly good on a cold winter night (or any other time.)
 
Ken , lentils yes but smoked pork hocks with lentils !! I thought about that since it was -8 F this morning !
 
Udon noodle soup

Pho (Vietnamese beef noodle soup with various animal parts and vermicelli noodles)

Lentil soup with sausage and a good hunk of sourdough bread

But yeah, chili is number one.

I use 1 can of Campbells beef bullion in mine with venison or beef, taste the difference! ( High in sodium ) and the salt free is blah.;)
 
Red Beans and Rice (mahatma is fine....) with lots of shredded cheddar cheese on top! :D

∙ WV chili serves 12 weight watchers 9 points per serving
2 lbs venison cubed into stew meat
½ lbs hot sausage, bratwurst or other favorite
1/4 lbs bacon
1 quart canned tomatoes
1 large tomato
12 oz kidney beans
8 oz raw mushrooms
2 large onions
2-4 granny smith apples
½ cup raisins
1 pt apple cider (hard preferred)
1/4 cup blackberry wine (kosher preferred)
1 oz soy sauce
1/4 cup sorghum molasses
2 Tbs brown sugar
2 Tbs Honey ( I prefer wildflower)
3 jalapeno peppers sliced
3 banana peppers sliced
2 heaping Tbs salsa (not picante) (see Simple Salsa for a recipe if you want
or a high quality store bought brand if you prefer)
1 Tbs lemon juice
2 Tbs crushed garlic
½ tsp Italian herbs
½ tsp basil
½ tsp sage
½ tsp curry powder
½ tsp powdered garlic
½ Tbs paprika
1/4 tsp red pepper flakes
3 Tbs of cumin powder
3 Tbs Chili Powder
3 Tbs Black Pepper ( I prefer freshly cracked)
Salt to Taste
Cheese (optional for garnish)

Brown venison over a high heat, add sausage, and bacon, then add onions,
hot peppers, tomato, crushed garlic, and apples. Turn heat down to med/hi and
add beans, canned tomatoes, mushrooms, Cider, wine, soya, lemon juice, brown
sugar, molasses, honey, and salsa. Add spices in order given then add raisins,
cook at med temps for at least 30 min. ( the longer the better 1-3 hours 1 hour
med/low the rest warm to low for a thicker broth).
Serve with Crackers, Cheese, bread, sandwiches, over rice or however you
like. Keeps well in refrigerator and tastes even better after sitting for a few days.

this may be good but in texas chili doesnt have beans/mushrooms/etc lol. and whats up with the raisins??

in texas chili is meat, chili powder (a lot of it) a little onion, cumin/lotta jalapeno, and thats it.

That's what I'm talking about! That's how I make my chili:

1lb beef
1lb chili peppers (de-seeded)
salt
chili powder
cumin

If you've never experienced this delicacy , your missin out holmes.

"My family recipe"

1 large ham hock
2 strips butcher style bacon
2 1/2 cups Pinto beans
Water to cover beans in pot approx 1 inch above

This can be cooked in a crock pot or normal pot on the stove , crock method turns out tastier IMO.
I usually boil the beans alone 3 times and rinse 3 times in cold water to get some of the gassy stuff out , then put it all in a crock pot , covered in water as explained.
notice I didnt add any spices ?
You really dont need any unless you really want them , a good 12 hour crock cooking will flavor those beans with that hock and the bacon just fine....
If you want though , add a little black pepper and season salt , or garlic salt but dont overdo it , generally add spices at the end of cooking so your beans n ham doesnt taste like too much like the spice.
Warm up some sourdough , or flour tortillas and enjoy !!!!!
 
I'm a pot roast fan myself, I also like to keep a big pot of bolognese going most of the time.

My wife makes a good white bean and chicken chile. :thumbup:

Beef stew would be second. :)
 
Chili and beef stew are very popular in our household. I also love a pork roast rubbed with rosemary and a little kosher salt. Also is a nice flavoring for a roast beef.

This is the time of year to eat lots of nuts and cheese too. We usually have some brie and a block of extra sharp 4 or 5 year old Vermont cheddar in the house. Love those crunchy cheddar crystals that it gets.... :D
