1)SERE 2000
2)Spyderco Lum

Don't even think about the ceramic Boker!!!!
It will break.
Also, avoid the Tomcat. It is not a one handed opener. If you are really interested in this knife buy the the SOGwinder 2. It has a very large, and easy to open thumbstud, a very similar thick blade, and a handle that is very easy to grip (kraton).
Any of the Benchmades or mission or Spyderco or Commander or Microtech will serve you well. (Although If you get the MT get the Socom, the others are too small for defense, I think)

You can also buy a STRIDER folder and cut through any of the forementioned blades.
