Blades n BBQ!

I live in Va and work in NC, so I get the vinegar of NC which I like also but prefer more sweet sauce, but does anyone else like mustard base sauce too, I assume it is a SC thing, we went to a Myrtle Beach for vacation and we like a certain bbq restaurant in Surf Side area. A friend of mine also told us of a nice place to eat in North Myrtle called the Shack, great food but small but the wait is worth it. so my. Thought is I like sweeter sauces first, but the mustard is good too. Can someone list some of the different sauces and which you prefer? Like what is the differences? I know there are different recipes but are there more regional flavors? Just to add some sauce to topic, pun…and bun intended. 😁 Iw if I could get some different sauces on some burnt ends would be nice. I also know a good bbq also depends on how it is cooked and what they may use to smoke it or flavor it.

Edit: just read about an Alabama white sauce, with a mayonnaise base. I am getting hungry!!

I’ve had the mustard based sauce in Charleston SC from Bessingers. Always bring a couple of bottles home with me. It’s excellent. Your absolutely right that the sauces change by region but I’m no expert. Though I have to say I enjoy them all.

I’ve hade white bbq sauce from a southern bbq chain called Mo’s bbq. Very good all the way around. And their wings are incredible, especially dipped in that white sauce. The franchise was started somewhere in Alabama I believe.

I would definitely recommend making your own bbq sauce. It’s extremely easy and you can make it just the way you like. There’s tons of recipes on yt to get ya started.

My bro in law smokes his meat and he uses a good rub and sauce, it would be fun if he made his own, he likes to experiment.

Charleston SC has an amazing BBQ scene. Can't really go wrong with any of the bbq spots. Bessinger's has a great pulled pork sandwich and I'm a big fan of their sauces. I met the pit master/owner at a backyard bbq a couple years back and he was a super nice guy!

Great lookin ribs and knife.

Some other great bbq staples are lewis BBQ which is more texas style (Beef Back Ribs Special)

and Rodney Scotts BBQ which is whole hog bbq but they are temporarily closed (Pork Ribs)

My ex girlfriend has family in Charleston. We used to go at least once a year. And every year we would always stop at Bessingers. Delicious! And I would always come home with a few bottles of that mustard based bbq sauce!!!

Those all look excellent. I’ve heard of Rodney Scott. He’s become quite well known. Would love to try some of his whole hog. Why are they closed? I thought he was killing it.

The parent company that owned his franchises became overleveraged and stopped paying their bills and got sued to oblivion and Rodney Scott's restaurants got caught in the crossfire. I imagine he'll find another backer and open at least the Charleston location within the next 12 months.
It ain’t a burn roun ‘chere with out some boudin baby!!

What a spread! Those ribs are looking awesome.

Is it the sauce and spices or the pork your stomach has issues with? Maybe you can try a different meat? Sorry you can’t enjoy them anymore.

It’s because they’re too fatty. And by too fatty I mean for my stomach not my tastes. That’s actually what I love about em. I’ll occasionally still eat em and pay the consequences because they’re worth it!
