Bradford USA: Gatsby in M390

Glad to see people besides me modifying their tools for better function.
Most people who view this thread will be ( :confused: :eek: :mad: ) appalled that you would cut anything with such a knife, especially meat - much less take a grinder to it.

Kudos Sir, for doing what it takes to make your tool function better, for you.
Kudos to the maker for being supportive, and not offended. :thumbup:
 
I've used my Gatsby for months now as a general purpose kitchen knife. I've never been disappointed. Sharpening is easy if done on a regular basis on ceramic stones.
 
I would certainly consider doing the mod that Gary did, I really like it. It does make the knife even more steak friendly. If it will only be used for steak, I think this is great mod. Many of the Gatsby/Orwell users including myself use the original profile to slice all sorts of light-duty or kitchen type foods such as vegetables, cheese and also for the fine occasional slab of red meat ;)

If I were to make another batch of this similar profile, I would certainly entertain dropping the tip. As is stands now, I only have about 20 of the Gatsby Meat Scalpel's left. If someone was interested in Gary's mod we could certainly chat via email about the particulars.

You only have 19 left. I just ordered one!!! I've been wanting a dedicated steak knife to take when the wife and I go out for steaks about once a month. I've used everything from a Case Sodbuster to ZT0350. Now I'll have a really nice knife use and to set on the table when enjoying a nice prime rib. Hope it doesn't take too long to ship!:D

The kydex that you can get for these works pretty well, the one I have is quite snappy, takes a bit of force to get it into the sheath but then it provides confidence in neck carry !

And Ronnie, Bradford and crew usually ship pretty quick, nice knife for the new year!

Quick update;
I did "Gary's Mod" to a couple of the Gatsby's today. One for a customer and the other for my next meal :) I really like it! I removed material all the way back to the start of the logo for more of a "bowie" look.
Here is a comparison shot, with a standard Gatsby in the middle and the 2 that I modified (top and bottom).

Gary, you are correct. I already got an email that the knife shipped. Perfect. Can't wait to get mine and press some custom kydex around it, then off to the steak house!:D

Thanks flash, and Brad, maybe a shot showing the bowie shape along side the standard shape, putting them spine to spine to see how much of a difference there is between the two? Once I get Raj's knife, I'll try and remember to do the same with his and mine.

Late to this thread, but that Gatsby looks great! :D Sorry, couldn't resist... :D

Seriously, I do like the drop point better aesthetically, although I understand the reason for the original design. Great looking knives! The M390 ain't too bad either... :D
 
Welcome to the thread sir :) and yes, that m390 is keen, I haven't had to sharpen mine yet, normally it's something that is a necessary evil for most knives, but this arrived in fine shape and with the cutting I've done since getting her, she's stayed quite sharp, slicing toilet paper sharp even, which has to be pretty sharp to do so. Which says something also on how Brad's been putting his edges on lately too.

Mr Bradford does put a very nice edge to his knives.
Also kudos to him being able to look at other peoples ideas and mods with an open mind and not take offense.
He is also a very customer oriented maker and I hope he always stays that way :thumbup:
 
RJ, you are correct sir, here are some comparison shots showing my rendition of the clip bowie grind verses the original grind on RJ's knife, it's here to be ground down town ;)

Setup as a neck knife, in the kydex sheath it has very solid retention, not a worry that she'd ever come free during normal wear

Here you can see my knife is just a hair shorter than original but I don't feel that hurts it's performance at all.

Mine came superfast. Customer service and communication were SUPERB. What a great way to do business. What a fine, fine blade. #64 of 99. Glad I could get one when I did. Wrapped it in some Desert Tan kydex. Next stop........prime rib!!!

Thank you. Mine was very sharp as well. I had a small piece of thermal receipt paper from the local drug store laying around and it curled off slivers with no issue.
 
Yep, very grabby edge on these, nicely done edges and the edge thickness is down fairly thin,

Great review! I concur and very much enjoy their use.

I bought 6 of these 'steak' knives when first introduced by Brad. I knew that the M390 was going to be an excellent choice for these knives and they certainly are all I'd hoped they would be.

I do use them solely as steak knives and have had them for a couple of years now. Truthfully, I'm dyin' to sharpen them on my Wicked Edge system, but they are all still razor sharp. The holidays have been a real joy since I get to see the reactions of family as they use these knives on elk, beef and lamb. They cut like nothing else I've tried. Butter......as smooth as butter.

Mine are done in maroon micarta and they remain gorgeous after much use. These are bullet proof knives that enhance any setting where one might wish to have a steak knife.

Great work by Brad.......as usual. The same F&F went into the Guardian 3 as went into my Gatsby's that Brad sent me. Excellent products and service which seems to be standard procedure @ Bradford Knives. And dealing with Brad........always a pleasure.
 
Had that prime rib today with the Gatsby. Enjoyed the blade even more now that it saw some use. Thanks Gary for talking me into it. :D

Phenomenal blade and craftsmanship, and the M390 cuts like a dream.
