I took the kids to a local buffalo farm to pick up some buffalo burgers. I don't know how common buffalo farms are in the U.S., but I' am always impressed by these animals. The farm maintains a store that sells buffalo hides, leather, horns, steak, burgers, dogs and sausage, and every thing else associated with a dead buffalo. My understanding is that keeping buffalo is different than keeping cattle, apparently they are unpredictable and somewhat dangerous. The meat is great:thumbup:, very lean and very healthy. I see so few buffalo, that it is hard to imagine the time that you could watch a herd pass for days...

Mmmmmm...buffalo. They are quite tasty.

Living where I do, it's not too hard for me to imagine those great herds. There are still miles and miles of nothing that would be perfect for them to travel over. Custer State Park in South Dakota holds an annual buffalo roundup to keep the park herd at manageable levels, here's a short video if you're interested.

That's a cool vid... We have a lot of dairy farming here, but very few buffalo. Wish we had more, the meat is pricey...

Neat, they sure have a primitive look to them don't they? I've had steaks of buffalo in restaurants before. Very nice.
 
Custer State Park is a great place to visit. We took a jeep tour around the park and through many, many bison. They were pretty used to the vehicles and pretended that we weren't there. The tour guide mentioned that one time a bull wandered really close to the jeep, so close that one of the people decided to pet the big furry critter.

WHAM!:eek:

The bull slammed into the jeep and took off in a split second.

The guide rolled his eyes as the people thought about how long they'd have to wait until they could change their underwear.

Badlands National Park is another place to spot these creatures. Here are a few pics I took a couple years back,

Great pics! Hard to imagine the massive herds that used to travel the vast grasslands. I hope to one day be able to see one of these marvelous creatures in the wild. Just need to get over to where they roam.
 
They are great pics, what awesome beasts eh, they must have been quite a sight when there were hoards of them roaming the plains !!!!
 
Lots of Buffalo farms in the province in which I live. It means we can buy it at our regular grocery stores without paying such a premium for it. I use it instead of ground beef in nearly everything I make (chili, burgers, Tacos, Spaghetti). So much less fat and a better taste (for me).
 
Buffalo meat is good stuff, it is available just about everywhere around here, on account of all the buffalo i guess. I have seen some up close, never a big herd though. I dont know if many live in the wild, as i see them mostly in nature reservations.
 
I went to sleep in a rest area in Home on the Range North Dakota. In the middle of the night I heard sounds, looked out and they were everywhere! More Bison than I could count just slowly walking through the parking area.
The next morning they were gone but you could still smell them. My dog was going absolutely nuts with the smells.
 
I've have several different cuts of bison in the freezer. So far, I've only eaten the hamburgers. The meat is obviously lean, but it left a slight greasy coating in my mouth. Is this normal? And should I expect this of the steaks, too?
 
Hey Mike, glad you enjoyed yourself. One other thing about Buffalo (besides being close to Niagara Falls :rolleyes:), a Buffalo rib makes an excellent bow for bow drill fires. I used to have one until my daughter's dog ate it. :(
