Buffalo Pics

I've have several different cuts of bison in the freezer. So far, I've only eaten the hamburgers. The meat is obviously lean, but it left a slight greasy coating in my mouth. Is this normal? And should I expect this of the steaks, too?

Scott - No, I would say that is not normal based on my experience.. Buffalo is noted for having very little fat content, so it shouldn't be greasy in any way. You actually have to be careful not to overcook it in my experience...

Doc - There are two big dogs that live on this farm. They both were gnawing on huge buffalo bones. They looked pretty happy, but I bet they have eaten a lot of bow drills...

Having been a custom meat cutter in a family business while in high school and college, I've cut up several of the things for the freezer. Some think the hump on top of the shoulders is fat but in fact it is caused by an elongation of the vertebral "feather" bones that supports pure muscle! Those shoulder muscles and the Ligamentum Nuchae (the large ligiment that supports the head on animals like horses, cows, etc.) help to support that massive head.

The last one I butchered was harvested off of a Bison farm by three drunk "Elks Lodge" brothers who were providing it for a annual "Buffalo Feed". They went into the pasture and shot the animal between the eyes with a
.270 Winchester. The bison only looked up to see who had just smacked him in the head. Another shot and now the animal was angry. He ran away from them, through a wire fence, and into the woods. As I cut up the animal, the "now mostly sober" Elks leadership watched. I mentioned I had never tasted buffalo up to that point. They gave me two very nice Porterhouse steaks, one for my wife! We took them to a party for the employees of the newspaper my wife worked at. Boy, were they good!
 
Scary critters there.

When we visited Custer State Park and Yellowstone we were waned not to approach them because recently a photographer/tourist was gored to death.

Seems like they're getting a little payback for the mass slaughters a while back. And they say elephants never forget!

I love watching buffalo, we have a small herd at the MN zoo, and the meat is spectacular.

I have two buffalo arm roasts thawing out right now, soon to be jerky.:D

There is a farm about 15 miles from where I live here in England. I took this a few years ago, think they also sell meat etc as they have a farm shop.
