But... will I actually USE it?

I found that stuff to be very easy to work with...but I'm fairly ignorant about what constitutes easy and difficult in my state of in-experience.

It is about as synthetic as you can get, but it makes a great handle.

I just drilled out the slot for the tang. One advantage G10 and ivory have over wood when making hidden tang handles is the ability to get a clear view into the slot to see where any obstructions are located. I just hold the side of the handle block up to a light source and move it around to focus the light at various depths. That's a LOT easier and more accurate than trying to find exactly the right angle for holding the block so that light can go down the hole far enough to make obstructions visible.

You don't see a whole lot of through-tang G10 handles. I think that will offer you some cool opportunities for carving and texturing

Funny you should mention that... the idea hadn't occurred to me until lunch today, at which time I thought about how I might add some character to the handle. It's a pretty bland shape right now.

G10 is pretty brutal on cutters. I have resorted to using diamond coated cutters if I have to do a lot of it.
