Taking a stab at some hamachi.
Did fairly well, blade didn't flex or bend, didn't chip on the bone.

 
Busy friday, not a lot of time for a review today, but I will try. Got my helpers doing all the prep today, but will try stealing work from them.

The Reese did first well on the green onions, though not as fine as my konosuke.
 
Reading this thread with great interest as I've never been happy with my crappy kitchen cutlery and have never had the pleasure of using a high quality kitchen knife (hard to justify that kind of expense when I'm not a chef, and I don't have access to try out someone else's).
What price range would a handmade knife like this fall into?

And the question that is probably echoed a million times around here (but I figured I'd ask within a thread that has contributors who very obviously know their stuff): Is there a budget knife that performs reasonably well for someone who is not a chef (just preparing home dinners and can't stand it when a recently sharpened knife struggles to cut a tomato slice), but doesn't want to spend a ton of money (maybe under a hundred)?

The holidays are approaching, and I'm already being asked for gift ideas...

Ahem ... a 'recently sharpened' knife that can't cut a tomato speaks more to the lack of sharpening skill than the quality of the knife. ;)

There are lots of very good kitchen knives under $100 - Victorinox Forschner, JA Henckels, Wusthof

The Victorinox Forschner Chef at $50 is ubiquitously highly recommended.

I sell this knife configured this way for $300. But, stick around and when I get the knife back and clean it up, I'm going to give it away, so there will be some sort of give away!

Travis is right, there are a lot of quality chef's knives for under $100 though.

I'm a big fan of Ontario's Agilite series. They're not too expensive.

I'll have to use that quote the next time I read a thread in which someone says a knife doesn't hold an edge well.
I'll just tell them they suck at sharpening :D

I will be checking into the Vic/For knives as this was not the first time I've heard them mentioned with higher regard, and I WILL stick around to be entered into the giveaway.
Were it to happen, winning a handmade knife would be some crazy good luck!
 
Adam that is a bee u ti full knife! What is the width of the blade at the choil?
 
Thanks for the measurement. That knife really speaks to me! Ive been following this thread and as someone who cooks for a living I deem it perfect and appealing to the eye.
 
Just an update. The knife arrived yesterday and it's in great shape. I want to thank all of the volunteers for testing the knife and giving great reviews and feedback! I have already started on the second version of this knife and it will be coming out soon. As for this one, I plan to have a give away and give it to someone, but I will start a new thread for that.
