Case CV or SS?

I keep reading a lot of mixed reviews on the steel case uses, im thinking of getting a Medium Yellow Handled Stockman and i'm trying to decide between the CV or the SS, any help on this would be great. It's going to be an everyday user, opening boxes, preparing food, maybe butchering the occasional squirrel or two. Thanks again for any help!

Either one will be fine. Don't put too much stock in steel reviews by steel snobs posted in knife forums - best to make up your own mind based on real use. My choice would be CV.
 
I haven't owned CV, but would like to. But I do have a SS Case Barlow that is wonderful for a grabby edge. Again, you'd probably be happy with either.
 
My opinion with the uses you stated, I would try a yellow scaled Case trapper in CV. If that didn't work try the stockman in SS.. They are very economical knives to own....
 
I have a Medium Yellow Handled Stockman CV and I love it. It is a very handy knife.
 
If the choice were between CV and Tru-Sharp, I would choose CV.
 
IMO either one will "not" be fine. CV will hold an edge longer. In my expieriance it's no contest.
 
I like them both. The good thing is with a stockman you get a bunch of blades. So even if one dulls up while you are out and about, you have two more to use until you get home to sharpen :D
 
I think the trick is, get to the point where own and use both. :)

Either one is perfectly suitable for an EDC knife for most people, they both take a decent edge and are easy to sharpen. If you don't live in very rust prone environment, I would go with the CV. It holds its edge a bit better.

Sure, some of the more sexy, modern, super steels will take or hold a better edge, but really, I think the steel snobs make a bigger deal out of that than is really justified. :p
 
I find the CV easier to bring to very sharp.
But I cannot see a difference in the use itself
 
I prefer CV just for the character it takes on during use. I only buy carbon steel these days, but if you don't care about looks, and are making a decision based on a user standpoint only, then either would be fine and about equal.
 
I really prefer the CV, but that may just be the nostalgia factor, I'm not enough of a knut to be able to speak confidently about which is better :D They both cut for me, and that's all I ask :D
 
I collect Case knives, especially in the toothpick pattern, and have quite a few of them...

In my experience, the CV knives come in sharper from the factory, stay sharper longer, and are easier to sharpen than the Tru Sharp stainless.

The difference between the two steels is noticeable; not huge.

The CV Yellow Delrin Peanut I have coming should be a welcome addition to the "family." It should be here by Friday! (Latest USPS update.)

I have SS and CV Case knives. My preference is CV. But, SS works fine for most purposes. Get one of each and come to your own conclusions.
